With Everything you have, the assistant reaches all your mailboxes, calendars and address books, including the team's and any you add later. With Only what I choose, it reaches only what you tick, such as your work mailbox and its calendar. It can't see the others, so it can't search, read, change or send from them. Notes have their own permission.
